Wild Rice and Chicken Salad

This meal may be made the day before serving, so it’s great for a casual get together with friends and family!

what you need:

3 cups cooked wild rice (one 6oz box should work)

1 rotisserie chicken or 3/4 chicken breasts depending on size (torn into bite sized pieces)

1 cucumber peeled and chopped

1 pint cherry tomatoes, halved

1 cup dried cherries

1 bunch green onions sliced

1/2 cup chopped fresh parsley

FOR THE DRESSING:

3/4th cup olive oil

3/4th cup vegetable oil

2/3 cup red wine vinegar

2 TBLS honey

1 tsp garlic, minced

1 tsp dried basil

1 tsp dried mustard

1 tsp salt

1 tsp pepper

Let’s Cook:

1. Combine the first 7 ingredients in a large bowl

2. Make the dressing by combining all ingredients and stirring thoroughly

3. Add dressing to chicken mixture. (I usually don’t use all the dressing)

4. refrigerate until 15-30 minutes before serving

5. Toss salad and dress some more if needed

6. Enjoy! :)

Blue B-B-Q Chicken Salad

Blue B-B-Q Chicken Salad

This salad is one of our all time favorite meals! It is so easy to throw together at the last minute and it tastes delicious!

What You Need:

4 boneless skinless chicken breast halves

your favorite bbq sauce – Stubb’s Original for us

your favorite blue cheese dressing

1 head of romaine

1 avacado

2 – 3 tomatoes

Let’s Cook:

Prepare chicken breasts and marinade for 30 minutes or longer in BBQ sauce. Grill chicken breasts. While chicken is grilling prepare salad by tearing the romaine and chopping the avacados and tomatoes. Once the chicken is cooked, cut it into bite size cubes. Mix chicken, romaine, avacado, and tomatoes. Drizzle a little BBQ sauce over the top and dress with your desired amount of blue cheese dressing.
