Yes, you read it correctly, green cake! I was first introduced to green cake at my former book club, and last week when I realized it would soon be St. Patrick’s Day, I emailed a friend and asked her for the recipe. I thought a green cake would be a fun way to celebrate St. Patrick’s Day with the boys and it was! Well, at least part way. The boy who won’t eat anything would only taste the cake…but that’s to be expected.
This recipe is so easy and the cake is so delicious and such a crowd pleaser. First you, begin with a long list of ingredients that you must painstakingly look for at specialty grocery stores all over town, uhm, NOT! All you need is yellow cake, eggs, oil (or applesause), water and a package of pistachio pudding mix. And if you want to make a glaze: powdered sugar and milk. The green food coloring is totally optional.
I used pear applesauce because it was what I had on hand. I thought it would be fun for the boy’s lunches today.
YUMMY…all finished cooking….Isn’t that bunt cake pan the cutest?! I got it at WalMart this week because I needed a pan for this recipe. You can see a little how the cake is somewhat green on the inside. For a really green cake, you can add a few drops a food coloring. I didn’t want to freak the boys out too badly, so I left out the food coloring.
Before I could get everything finished it was time to pick up my youngest from school. When we got home, he was more that happy to help me make a powdered sugar glaze (with food coloring) and to help glaze the cake. (He just wouldn’t eat it after dinner.)
Since I was taking a pictures, he wanted to take some as well. Here is his picture of the part that, “looks like a big donut.” I think he did a great job taking a close-up of the donut hole; don’t you?
Green Cake:
Ingredients: yellow cake mix and everything needed to make the mix
1 box pistachio pudding mix
Follow directions for the cake mix and add the package of pistachio pudding – It’s that easy!
Glaze:
Mix powdered sugar and a touch of milk until you reach glazing consistency
dribble over cooled cake
