Banana Blueberry Bread

This bread is so good! Seriously, you HAVE to make it! J devoured it! I adapted this recipe I found by Sandy at All Recipes.

what you need:

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup applesauce
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 medium ripe bananas, mashed
  • 1 cup fresh blueberries

let’s cook:

  1. In a bowl, combine the flour, baking soda and salt. In a large mixing bowl, cream the shortening and sugar. Add eggs and vanilla; mix well. Beat in bananas. Gradually add the dry ingredients, beating just until combined. Fold in blueberries.
  2. Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Beer Bread

If you have a beer, some sugar, butter, and self-rising flour, you have everything you need to make this ever so yummy beer bread. Seriously this bread is delicious!

I’ve only made this bread with Newcastle but I’m sure other beers will work just as well. In fact, I really want to make some with Guinness, but that will have to wait for another day.

what you need:

3 cups self-rising flour

3 TBLS sugar

1 12oz bottle of beer, room temperature

Melted butter

Let’s Cook:

Preheat oven to 350 degrees. Combine flour, sugar and beer until mixed. Transfer dough into greased loaf pan and allow to rise for 10 minutes. Bake until a knife inserted into the center comes out clean (about 45 minutes).  Before, pulling bread from the oven brush top with melted butter and bake for 5 more minutes.
