Banana Blueberry Bread

This bread is so good! Seriously, you HAVE to make it! J devoured it! I adapted this recipe I found by Sandy at All Recipes.

what you need:

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup applesauce
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 medium ripe bananas, mashed
  • 1 cup fresh blueberries

let’s cook:

  1. In a bowl, combine the flour, baking soda and salt. In a large mixing bowl, cream the shortening and sugar. Add eggs and vanilla; mix well. Beat in bananas. Gradually add the dry ingredients, beating just until combined. Fold in blueberries.
  2. Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

This week we celebrate family! Family is one of the most important things in my life. When life is great, my family is there laughing along with me, and during my lowest moments, my family is there to surround and protect me. Beach Week!

One of our many vacations this summer (I swear it seemed like we were always on the move.) was my family’s annual beach week. It’s a week of sun, overeating, games, and camaraderie. This year the boogie boards ruled. The waves were amazing: we spent many hours in the surf hoping to catch the perfect ride into shore. After a long morning of boogie boarding, we headed up to the room for lunch which was followed by a relaxing afternoon by the pool.  Ah, paradise. This year the unstinging jellyfish made another appearance. I think Sponge Bob would be proud of the huge jellyfish trap the children built. It was quickly filled with as many of the translucent critters they could find.  While other parents were pulling their children away from the small jellyfish, we pointed them out. “Hey, guys, there’s one over there, and another one right behind you!” Once everyone around us realized they were harmless and we weren’t the worst parents on the planet, there was a small army of little kids combing the shore for jellyfish to put into the trap. When not boogie boarding or jellyfish collecting, we built goop castles, played cards and tinkered with the Uncle Chris’ Ipad. We had a blast. Here are some pics from our visit to the beach:

Our First Day!

Our youngest is officially in Kindergarten and loving every minute ofeach day! There were no tears at drop-off on Thursday. In fact he told us at dinner, “Mom, I kept on coloring while all the kids and moms were crying.” :) That’s my boy! (They had a coloring sheet for morning work.) He was supposed to get an express lunch Friday because it had yogurt, cheese, and graham crackers, but I received a note from his teacher explaining  that Kindys aren’t allowed to go through the express lane-oops. So he ate yellow cake for lunch…..and wants to have it again…..hmmm, I don’t think so. (He’s our super picky eater, so mealtimes are always an adventure around here!)
J seems to enjoy his class. They did a rules role-playing game to learn what to do and what not to do in the classroom which he thought was rilarious (that means funny, ya know?!).  On Friday J’s class did a few getting to know you activities and each student shared 3 items from home which is always fun.

It only took the bus @ 2 hours to make it home the first day of school!! ACK! Gary the dog
and I were sunburned and parched by time the boys made it home. They
were in rough shape as well from sitting in the hot bus for that long – it was 99! Friday they were home in a little over an hour, but it was still too hot to be comfortable. Hopefully this HOT weather will break soon!

Here’s a layout I created with the pictures from the first day. I used Cindy’s Layered Templates #67 and My Who’s in School Class of 2010 (which is dated 2010 because it’s a remake of an old kit, not for this year’s seniors. Sorry about the confusion!!)

Take Out Tuesday

Wild Rice and Chicken Salad

This meal may be made the day before serving, so it’s great for a casual get together with friends and family!

what you need:

3 cups cooked wild rice (one 6oz box should work)

1 rotisserie chicken or 3/4 chicken breasts depending on size (torn into bite sized pieces)

1 cucumber peeled and chopped

1 pint cherry tomatoes, halved

1 cup dried cherries

1 bunch green onions sliced

1/2 cup chopped fresh parsley

FOR THE DRESSING:

3/4th cup olive oil

3/4th cup vegetable oil

2/3 cup red wine vinegar

2 TBLS honey

1 tsp garlic, minced

1 tsp dried basil

1 tsp dried mustard

1 tsp salt

1 tsp pepper

Let’s Cook:

1. Combine the first 7 ingredients in a large bowl

2. Make the dressing by combining all ingredients and stirring thoroughly

3. Add dressing to chicken mixture. (I usually don’t use all the dressing)

4. refrigerate until 15-30 minutes before serving

5. Toss salad and dress some more if needed

6. Enjoy! :)

New Products: 08-07

Hello, Digiland! After taking a couple of weeks off for a family vacation, I’m back with two new products I know you’ll love this week! The first is Board to Pieces a collection of torn cardboard pieces. These pieces are perfect for layering on your pages. Second, is the whimsical, childish Playtime Alphabet. This alpha comes in 8 different colors and has an .abr brush set!

In other news, keep your eyes open next weekend for a Penny Springmann Designs CT call! Yes, that’s right, I’m having a call! :) Look for more information late next week!

Smoky Mountain Vacation

Earlier this summer we met up with Paul’s extended family for a fun packed week in the Smoky Mountains. We hiked, white water rafted (almost lost a few there), visited with my brother in Knoxville, tubed, swam, zip-lined, mini-golfed, and played Rock Band. We all had a blast: the adults enjoyed catching up and the kiddos rocked-out to J’s idog. Paul came one step closer to swimming and Jackson was so proud to have climbed his first mountain. Once again, my team lost at mini-golf. I’m beginning to believe I’m cursed! :) My favorite activities on the trip were white water rafting and the Ramsey Cascades hike. The cascades were amazing!
